摘要:
为了研究羧甲基茯苓多糖(CMP)在保鲜方面的应用,首先测定了CMP溶液对香菇多酚氧化酶体外酶活的影响,然后分别采用质量浓度为5、10、20 mg/mL CMP溶液处理新鲜香菇子实体,以不做任何处理的香菇子实体为对照组,于 (4±1) ℃下贮藏,测定贮藏期间香菇的感官品质及其可溶性蛋白质、还原糖、总糖、抗坏血酸、总酚含量。结果表明:CMP溶液对香菇多酚氧化酶体外酶活具有抑制效果,半抑制浓度为4.41 mg/mL,90%抑制质量浓度为13.42 mg/mL。香菇保鲜实验处理组贮藏前期能够较好地维持香菇总酚含量,贮藏末期能够有效延缓香菇可溶性蛋白、还原糖、总糖、抗坏血酸含量(P<0.05)以及感官评分的降低(P<0.05),其中20 mg/mL CMP溶液的贮藏保鲜效果最好(P<0.05)。CMP溶液处理延缓了香菇营养成分的损失,降低香菇褐变速率,提高了香菇的感官品质,因此CMP溶液处理能够改善香菇的采后贮藏保鲜效果,同时为CMP的应用提供新的方向。
Abstract:
To study the application of carboxymethylpachyman(CMP) in fresh-keeping, firstly, the effect of CMP solution on the in vitro enzyme activity of polyphenol oxidase from Lentinula edodes(L. edodes)was investigated. Then, fresh L. edodes fruiting bodies were treated using CMP solution at the concentrations of 5, 10 and 20 mg/mL respectively, and the fruiting body of L. edodes without any treatment was used as the control group. All experimental treatment groups were stored at (4±1) ℃. The sensory quality of L. edodes and their soluble protein, reducing sugar, total sugar, ascorbic acid and total phenol during storage were measured. The results show that CMP solution has inhibitory effect on the activity of L. edodes polyphenol oxidase in vitro.The half inhibitory concentration is 4.41 mg/mL and 90% inhibitory concentration is 13.42 mg/mL. The experimental treatment group of L. edodes preservation can better maintain the total phenol content of L. edodes in the early storage, and effectively delays the decrease of soluble protein, reducing sugar, total sugar, vitamin C content(P < 0.05) and sensory score of L. edodes (P < 0.05)in the late storage, among which the storage and preservation effect of 20 mg/mL CMP solution is the greatest (P< 0.05). It delays the loss of nutrients, reduces the browning rate and improves the sensory quality of L. edodes. Therefore, the CMP solution treatment can improve the postharvest storage and preservation effect of L. edodes,at the same time, it provides a new direction for the application of CMP.
